What breaks when the bookings are in three places
Two people sell the same seat. The list the boat leaves with is not the list the office has. The money taken at the dock does not match the money in the system, and somebody spends the evening working out which.

Closing the day
Every payment is already on its Booking ID. The dock cash and the online deposits are on the same page, and the drawer closes against a counted total.
